Homemade Tomato Soup

Ingredients
Ingredients:Carrots, raw, 1 medium (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)Celery, raw, .5 cup, diced (remove)Red Ripe Tomatoes, 6 medium whole (2-3/5" dia) (remove)Garlic, 2 clove (remove)Chicken Broth or Bouillon, 3.5 cup (8 fl oz) (remove)Heavy Whipping Cream, .25 cup, fluid (yields 2 cups whipped) (remove)Olive Oil, 2 tbsp (remove)
Directions
Fry onions in olive oil - add carrots & celery, cook for a few minutes. Add tomato & garlic. Continue cooking until soft. Add chicken broth, 1 tsp ground thyme, cover & cook for 20 - 30 minutes until veggies are soft. Blend in blender. Return to low heat & add cream to thicken over low heat.
