Amaranth Apple Fritters

Ingredients
1 cup of shredded apple1 egg1 egg white1/4 cup of amaranth or other whole grain flour2 tsp of cinnamon1 tsp of vanilla1 dash of salt
Directions
Mix all ingredients and cook like pancakes in a skillet with cooking spray.
I like to make them small about 2 inches across.
No syrup is needed. Kids might like some brown sugar sprinkled on top. If you can spare the calories... pecans are a yummy addition.
