Chicken with Bulgur and Beans

Ingredients
4 tsp olive oil1 medium onion6 cloves garlic or garlic powder6 mushrooms, sliced16 oz chicken, boneless/skinless, cubed1 cup bulgur (with soy)2 cups vegetable broth (or chicken broth)1 15 oz can black beans with juice2 tbsp curry powder or taco seasonining
Directions
Add olive oil to skillet, heat on medium. Add onions and saute; add mushrooms. Saute chicken in same pan until browned. Add remainder of ingredients and cook covered for 25 minutes
