Dad's Savory Slow-Cooked Chicken Cacciatore

1 tbsp olive oil3 lb. chicken breasts4 cloves garlic2 tsp italian seasoning1 can (28 oz) crushed tomatoes1 lb mushrooms, quartered2 large onions, chopped1 medium green pepper, sliced into strips1 1/2 cup low sodium chicken broth1/4 cup cornstarch
1. Heat oil in a 10 inch skillet over medium high heat. Add chicken and cook until browned on all sides.
2. Stir garlic, italian seasoning, tomatoes, mushrooms, onions, pepper, and one cup of broth in the slow cooker. Add chicken and turn to coat.
3. Cover and cook on LOW for 7-8 hours or until chicken is cooked through.
4. combine cornstarch and remaining broth in small bowl until well combined. Add to crock pot and cook on high 10-20 minutes until boiling and thick.
5. Serve over wheat pasta or brown rice.
