Apple-Oatmeal Cookies

Ingredients
1 1/2 c quick-cooking rolled oats3/4 c white rice flour3/4 c spelt flour1 tsp baking powder1/4 tsp baking soda1/2 tsp salt1 1/2 tsp cinnamon1/2 c currants1 c finely chopped, peeled apple1 egg, slightly beaten1/2 c brown rice syrup1/2 c oil (sunflower or other)1/3 c milk
Directions
Makes abut 34 cookies

1. Preheat oven to 375F.

2. In medium bowl, combine dry ingredients.

3. Stir in currants and apples.

4. In large bowl, combine wet ingredients.

5. Use a rounded teaspoon to drop batter onto ungreased cookie sheets, press dough down to abut 1.5 in diameter.

6. Bake 12 to 15 minutes.
