Jo-Jo's Pate' Brisee for Individual Galettes

Ingredients
2 cups King Arthur Unbleached All Purpose Flour1/2 cup King Arthur Whole Wheat Flour1 tsp Natural Cane Sugar1 tsp Sea Salt2 sticks Land O' Lakes Unsalted Butter, cubed and chilled1/4 - 1/2 cup Ice-Cold Water
Directions
In a food processor, pulse the first 4 ingredients four or five times. Add the butter and pulse several more times until evenly distributed. Gradually pour ice water as you continue to pulse the dough. Start with 1/4 cup water, then add more sparingly until dough holds when squeezed in your hand.

Divide dough into 8 equal portions. Wrap each piece with plastic wrap and slightly flatten with the palm of your hand. Chill atleast 1 hour.

When ready to bake, preheat oven to 375 degrees. Roll each portion on a lightly floured surface to 8" or 9" in diameter. Place 1/4 to 1/2 cup of your favorite filling (e.g. fresh or thawed fruit or pot pie filling). Fold up the edges. Bake galettes on parchment-lined rimmed baking sheets for 20-30 minutes (rotating halfway through) until filling is bubbly and pate' brisee is lightly browned and cooked through.
