2 cans (10 ¾ oz) cream of chicken soup1 cup chicken broth1 teas curry2 cups cooked diced or shredded chicken4 cups cooked rice1 (9 ½ oz) can chow mein noodles3 medium tomatoes, chopped1 cup chopped celery½ cup chopped green pepper½ cup chopped green onion1 (20 oz.) can pineapple chunks, drained1 cup grated cheddar cheese½ cup slivered almonds½ cup coconut
Combine soup and chicken broth in a medium saucepan to make gravy. Stir to blend and add the curry powder. Add the chicken. Simmer about 8 to 10 minutes, until heated through.
On individual serving plates or bowls layer all ingredients. First stack rice, chow mein noodles, and chicken and gravy. Add the other ingredients as desired.
Serving Size: About 1 cup cooked rice and 1/4 the gravy plus toppings
