Hearty Banana Bread

Ingredients
4 medium ripe bananas2 eggs1 tsp. vanilla1/2 c. unsweetened applesauce1/2 c. plain low-fat yogurt1 1/2 c. whole wheat flour1 tsp. baking soda1/2 tsp. salt1 tsp. cinnamon1/2 tsp. nutmeg1/2 tsp. ground ginger
Directions
Preheat oven to 350 degrees. Grease and flour a standard bread pan.

In a medium bowl, mash bananas well with a fork or potato masher. In a large bowl, beat eggs and add vanilla, applesauce and yogurt; whisk until blended. Fold in mashed bananas. In a separate bowl, blend together dry ingredients and add to banana mixture. Pour in bread pan and bake for 60 minutes or until knife inserted in center comes out completely clean. Serves 12.
