Avocado Quesadillas Filling

Ingredients
2 firm, ripe avocados, diced3 scallions or green onions, diced1 c. monterey jack cheese1 c. black beans, drained and rinsed1 c. ripe tomatoes, choppedjuice of 2 fresh limes1 c. sweet corn (I use frozen)2 cloves garlic, minced2 t. cuminWe like to top with lettuce, salsa and sour cream!
Directions
Mix all ingredients except cheese and let marinate for at least 10 minutes.
Arrange avocado mixture on half of tortilla and top with cheese; leaving a half inch border around the edges. Fold each tortilla over to make a half circle.
On hot, dry griddle (I have used oil or spray), cook on both sides until golden brown.Cut in half to make two wedges. Serve with lettuce, salsa or sour cream, if desired.
Makes approximately 8, 1/2 cup servings. I have a big family!
