Diane's Lemon Cheesecake Squares

Ingredients
1 pkg (3 oz) lemon-flavored Jell-O1 Cup boiling water1-1/2 Cups Graham Crumbs3 tbsp butter, melted1 tbsp brown sugar8 oz no-fat cream cheese1 Cup granulated sugar2 tbsp freshly squeezed lemon juice2 tsp grated lemon zest (peel)1 tsp vanilla4 Cups light whipped topping, thawed
Directions
according to the magazine, each 3"X1.625" square would be 129 calories using light cream cheese. Diane used no-fat cream cheese but the calories according to SP are significantly higher!

1.In a small bowl, dissolve jell-o in boiling water. Refrigerate until slightly thickened, but not set (about 45 minutes).
2.Meanwhile, prepare crust. In a small bowl, combine graham crumbs, melted butter, and brown sugar. Stir well using a fork. Spray a 9X13 inch baking dish with cooking spray. Press crumb mixture evenly over bottom of pan. Refrigerate while you make filling.
3.To prepare filling, beat together cream cheese (block, not tub), sugar, lemon juice, lemon zest (peel), and vanilla on high speed of electric mixer until smooth. Add thickened jell-o and beat on medium speed until well blended. Fold in whipped topping.
4.Pour filling over prepared crust and spread evenly to edges of pan. Refrigerate for at least 4 hours, or until set. Cut into squares and serve. "Per square 129 calories"

**I will make this without the graham crumbs, butter, brown sugar and will instead pour the filling into muffin tins but I am not sure how many servings it will make. I will also substitute "No-Calorie Sweetener" for most if not all of the sugar which will reduce the calories greatly allowing me a larger portion for dessert.
