Almond Flaxseed Banana Bread

Ingredients
2 Bananas0.5 Cup Egg Beaters0.5 Tsp Baking Powder0.5 Tsp Baking Soda6 oz frozen orange juice from concentrate0.5 cup light soy milk0.5 cup unsalted almonds1 cup instant oatmeal0.5 cup ground flax seed2 cups wheat flour0.5 teaspoon cinnamon
Directions
Combine bananas, egg beaters and orange juice from concentrate in a food processor. In a separate bowl, combine dry ingredients except the oatmeal. Prepare oatmeal by adding the 0.5 cup of soy milk (heated) and stir to "cook" oatmeal. Once cooled, add oatmeal to dry ingredients and use a fork to break down large crumbles. Then add wet ingredients to bring the full mixture together and then put it in a baking pan/tin (coat with pam or butter, etc.) Top with extra cinnamin & splenda/sugar if desired. Bake for 35-40 minutes in a 350 degree oven.
