Zucchini & Carrot Rounds

2 cups grated zucchini (drained)1/2 cup grated carrot 1/2 cup bread crumbs( reserve a little for final dusting)1 Tbsp Hellman's Low Fat mayo4 egg whites2 Tbsp minced onionSalt and pepper to taste( I sometimes add red pepper flakes for some BAM!)
1. Mix zucchini, carrots, onion, mayo, and large portion of bread crumbs.
2. Roll into balls slightly larger than a golf ball, then flatten out and pat in the reserved bread crumbs. (repeat until mix is used)
3. Cook over medium heat in a skillet sprayed heavily with non-stick spray until lightly browned then flip.
Serving Size: Serves 3
