6 Talapia Fillets16 Corn Tortillas - medium (Taco size)2 to 3 Medium Avacados3 Tomatos Medium chopped3/4 cup Cilantro - chopped divided 1/2 cup and 1/4 cup3 cups Green or Napa Cabbage - shredded2 Green onions chopped3 to 4 Lemons Juiced2 to 3 Limes juicedSalt to tasteExtra Virgin Olive Oil - for frying fish
In medium bowl add one chopped green onion, 1 chopped tomato, two avacados, 1/4 cup cilantro chopped, lime juice. Mix until well blended. Guacamole should be chunky. Salt to taste and place to the side.
In Large bowl combine the shredded cabbage, two tomatos chopped, one green onion chopped, 1/2 cup cilantro chopped and Lemon juice. Salt to taste. Mixture should be a crisp slaw. ** My family enjoys a little extra Lemon Juice**
In a frying pan add EVOO and cook fish.
Warm corn tortillas.
Fill tortilas with Fish, slaw and a spoonful of guacamole.
