Introduction

Easily multiplied, Shrimp Tostadas are great with Black Beans and a side salad. Easily multiplied, Shrimp Tostadas are great with Black Beans and a side salad.

Ingredients

    2 tsp olive oil
    1/4 corn, frozen
    1/4 cup onion, diced
    1 tsp garlic, minced fine
    3 oz cooked shrimp (if frozen, defrosted); chopped
    1/4 cup fresh cilantro, coarse chopped
    1 Tbs low fat mayo
    1/4 jalapeno or other hot pepper
    1 corn tortilla (about 6" diameter)
    1/4 cup lettuce, coarse chopped


Directions

Makes 1 serving - recipe easily multiplied.

Hot Pepper Aioli
Seed and mince hot pepper.
Add to mayo and set aside

Shrimp Mixture:
- Heat a skillet and add 1 tsp. olive oil.-
- Add frozen corn, and saute until defrosted, about 2 minutes.
- Add garlic and onion, saute until onion is clear and soft, 2-3 minutes
- Lower heat, add additional 1 tsp olive oil and then add chopped shrimp and cilantro. Saute for 2-3 minutes, until shrimp is heated through.

When shrimp mixture is almost done, warm up the tortilla. Heat a second skillet, and place the tortilla in it. Flip after about a minute and heat other side.

To Assemble:
Place tortilla on plate.
Spread with Hot Pepper Aioli (may not need the whole Tbs).
Sprinkle lettuce, then add shrimp mixture on top.

Serve with black beans (or other bean of your choice).

    Delicioso! I subbed light sour cream + salsa verde for the aioli, plus added some red pepper flakes and other spices. Yummy and super easy! :) - 11/24/08
