Yummy Chicken Curry

800 g chicken, cut into serving portion1 1/2 tbsp curry powder1 tbsp canola oil4 cloves garlic, minced1 medium onion, sliced4 small tomatoes, sliced2 chicken bouillon cubes2 cups coconut milk3 medium potatoes, peeled and quartered
Marinate chicken in curry powder for 10 minutes.
Heat oil, and saute onion, garlic and tomatoes. Add chicken bouillon cube and marinated chicken. Cook until chicken turns light brown.
Pour coconut milk and simmer until chicken is tender and cooked through. Add potatoes and continue simmering until fork-tender. Serve on a bed of rice.
