Mexican Torta

Ingredients
3 large low carb/high fiber whole grain tortilla's1 lb. ground turkey, browned and drained1 can Mexican Rotel tomatoes1 pkg. Taco Seasoning Mix1 can FF refried beans1/2 cup FF sour cream1 cup low fat grated sharp cheddar cheese1/4 cup chopped green onions2 Tbsp chopped jalapeno from jar (opt)15 baked tostido's Scoops, crushed
Directions
Brown 1 pound ground turkey in pan and drain.
Stir in 1 can Mexican Rotel and taco seasoning mix into the meat and set aside.

Layer a pie plate sprayed with 'Pam" in the following way:

Place 1 tortilla in bottom
Spread refried beans over it
Spread sour cream on top of beans
Place another tortilla
Top it with meat mixture and veggies
Place last tortilla
Sprinkle with cheese
Sprinkle with crushed tortilla chips

If you like, you can add black olives, but they are not figured into the nutrition count.

Bake 30 minutes at 350.

Serving Size: Make 4 servings (but can be six smaller slices)
