Black Bean Burritos

All Spices to Taste:PaprikaCayenne PepperCinnamon1 can Low Sodium Black Beans (drained)1 can No Salt Added Yellow Corn (drained)1 can Garbanzo Beans (drained)1 small-med onion1 tbsp minced garlic2 tbsp olive oil2 Grated Carrots (optional)
1. In a fry/saute pan, heat olive oil on medium-high heat with chopped onion and garlic. Season with about a teaspoon of Paprika, Cinnamon, and Cayenne pepper. Stir and cover for approx. 5-6 min.
2. Add grated carrot and garbanzo beans. Stir and cover for 3 minutes.
3. Add corn and black beans together and stir with rest of mixture. Season with about a teaspoon of each spice, and turn the heat up slightly.
4. After the mixture is evenly heated and seasoned to taste, serve with white or brown rice, cheese, and an optional tortilla.
