Spanish Black Bean & Sausage Soup

Ingredients
1/2 cup chopped onions1/2 cup chopped celery3 cloves minced garlic3 slices low-sodium bacon, diced or 8 oz fat-free ham, diced1 14-oz can no-salt tomatoes1 10-oz can diced tomatoes with chilis2 cans black beans, drained and rinsed4 cups beef broth, low sodium1 pkg frozen cubed butternut squash1 c. frozen corn2 links of chicken sausage w/smoked mozzarella & artichoke, cut into bite-sized pieces.1 Tbsp. ground cumin1 c. dry sherry1.5 Tbsp. balsamic or red wine vinegarsalt to taste and cracked black pepper
Directions
If using bacon, saute diced bacon until crisp and remove. If not using bacon, spray pan with cooking spray and saute onions, celery & garlic. (If using oil, add this to the count.) Add tomatoes, beef broth, beans, cumin, squash, vinegar, sherry, black pepper, and reserved bacon or ham. Simmer about 15 min. Add chicken sausage pieces and simmer another 5 minutes.

Serving Size: Makes about 10 1-cup servings.
