Ingredients

    1- 15.5 oz can chickpeas
    1/2 c red bell pepper, chopped
    1 small red onion, chopped
    1 medium cucumber, chopped
    2 tbsp balsamic vinegar (I prefer Colavita)
    3 tbsp Olive Oil
    1/4 tsp garlic powder
    1/4 tsp oregano
    salt and pepper to taste


Directions

Mix together, chill and go! Stays well in refrigerator for about three days!

    I make something very similar to this with lemon or lime juice, red onion, and cumin and cilantro. It's a staple of my diet! :^) - 6/15/10

    try using only 2 tblsp oil, also add a bit of lime juice, cherry tomatoes or chopped tomatoes. - 11/14/11
