Introduction

This soup is thick like a stew and has the calories of a salad, but is warm and satifying. This soup is thick like a stew and has the calories of a salad, but is warm and satifying.

Ingredients

    1 tbsp olive oil
    1 c onion diced
    1 c cerlery diced
    1 c carrots diced
    3 c rutabagas diced
    4 c finely chopped cabbage
    3 c zucchini diced
    3 c broccoli chopped
    1 tbsp garlic chopped
    2 lg cans of diced tomatoes
    4 c chicken broth
    4 c water
    1 tsp salt or to taste
    1 tbsp pepper
    2 tbsp Frank's Red Hot (optional)


Directions

In a large stock pot saute onions, celery, carrots on medium high heat until onions are translucent.
Now comes the easy part...yes, after all that chopping there's and easy part!
Just add the remaining veggies, stock and water in the pot cover and simmer, reducing the heat to a low gentle boil. Simmer 30 minutes then add seasoning to taste. Don't be afraid to add different veggies and seasonings to suit your own taste.
This recipe makes at least 24 cups of comfort.
Serving size 1 cup.

    This contains chicken broth, so it should not be listed as Vegetarian, but it sounds good. I will substitute for veggie broth. - 3/31/09
