Soyrizo Sunrise

Ingredients
1-10 oz. tube soyrizo4 oz. queso fresco, crumbled *6 T. sour cream3/4 c. Eggbeaters6 corn tortillas
Directions
1. Cook soyrizo through in frying pan.
2. Add egg beaters & cook until eggbeaters are done.
3. Turn off stove. Crumble queso fresco in soyrizo/eggbeaters mixture, mix thoroughly.
4. Evenly divide mixture onto 6 corn tortillas spread with 1 T. sour cream on each.

Makes 4 servings.
