JD's Indian Raita (cucumbers and yogurt)

Ingredients:*Fage Greek Yogurt 0%, 1 cup*Cumin seed, 1 tbsp Kale Jeera (heated with oil to brown)Salt, 1 tsp to tastePepper, black, 1 tsp to taste*Lemon Juice, 2 fl oz about one lemonCucumber (with peel), 3 cucumber (I use burpless cucumbers -- grate them and remove as much of the wetness as possible by wringing them or pressing them against several paper towels.
Grate cucumbers, wring them of water. Add to bowl
Heat cumin seeds in olive oil and brown. Add to bowl
Add yogurt 3/4 cup mix and then 1/4 cup more if needed
Add salt and pepper and lemon juice. Mix. Store in airtight container in fridge until ready to serve as side dish to any Indian dish. Great as a side with JD's Indian Potato Patties.
Serving Size: Enough for a small serving for 12 people
