Scrambled Sandwich

Ingredients
1 egg1/3 cup tofu1/2 cup spinach1/3 cup diced tomatoes1/3 cup mushroomshalf slice of swiss cheese2 slices of light wheat breaketchup (optional)
Directions
Start with the spinach, tomatoes, and mushrooms in a skillet on medium low heat. After about a minute, beat the one egg and add to skillet along with the tofu and cheese. Scramble all the ingredients together. Once the eggs are cooked, add the scramble to one slice of bread, which can be toasted first :) I like to squeeze some ketchup on top of the scramble and then add the second piece of bread. Enjoy this delicious scramble sandwich!
