Fried Rice

Ingredients
2-1/2 cups Brown Rice, cooked4 Large Eggs2 tbsp Lemon Juice1 tbsp Soy Sauce (low sodium)
Directions
Spray non-stick frying pan and crack eggs into hot pan. Use spatula to quickly scramble eggs. When eggs are cooked, add rice & stir. Add lemon juice and soy sauce and stir. When liquid is absorbed, rice is done. Serve with any stir fry. Serves 4.

    This was good. For us the spices could be ramped up a bit. I used 2 eggs and 1/2 c. egg substitute. - 5/9/08
