Onion Soup

1/4 c Extra Virgin Olive Oil4 large onions, sliced2-3 sprigs of fresh thyme or 1/4 tsp dried1 bay leaf1 whole head of garlic, cut crosswise through the equatorsalt and pepper to taste5 cups of vegetable stock2 Tbsp cognac2 Tbsp parsley leaves for garnish
Heat oil over medium heat.
Add onions and cook until soft, 35-40 minutes; stir occasionally.
Add thyme, bay leaf, garlic, salt and pepper. Cook for 1 minute.
Add stock.
Bring to a boil.
Turn heat to medium, simmer for 15 minutes.
Garnish and serve hot.
Serving Size: Makes 4 Bowls
