Ej's Lentil Soup

Ingredients
Lentils, onion, celery, carrots, garlic, olive oil, fresh lemon, arugula or spinach, chicken broth, fire roasted tomatoes, red pepper flakes, salt, pepper, garlic powder, parmesan cheese
Directions
Soup can be made sove top or in a crock pot. If making stove top, spray pan with cooking spray and add 2 Tbsp olive oil. Saute onions,celery, carrots and garlic on medium heat until vegetables are transluscent. Add lentils and stir; add tomatoes. Add chicken broth. Bring soup to a boil; lower heat to simmer for approximately 20 minutes. Sqeeze whole lemon into soup. Serve and top with 2 Tblsp. parmesan cheese. Adjust seasoning to taste with salt, pepper and garlic powder, red pepper flakes.
If using a crockpot, put all ingredients into crock pot and cook on low for approximately 4-6 hours.
