Red Potato and Pinto Bean Salad

½ cup mayo1 cup sour cream1 tea minced garlic½ tea sweetener½ tea dried dill4 tabs finely chopped fresh parsleySea salt and pepper to taste2 cups red potatoes cooked and quartered2 cups cooked pinto beans, drained and rinsed 1 medium cucumber, peeled and diced1 small red onion, chopped
Mix mayo, sour cream, garlic, sweetener, dill,
parsley, sea salt and pepper.
In a large bowl, combine, potatoes, bean, cucumber,
and onion. Add mayo mixture and fold untill will mix.
Chill 2 hours and service.
Serving Size: Makes 12-115g servings
