Ingredients
Directions
6 small chicken breasts or 3 large cut in half2 tbsp Tandoori Powder (could also substitute garam masala spice)2 tbsp non-fat yogurt (I use Mountain High)1/2 clove garlic, chopped (could definitely add more to taste)1 - 1.5 tbsp lemon juice1 tbsp olive oildash of salt and pepper to taste** Prep time does NOT include overnight marinating time.
Combine all ingredients except chicken in a small bowl and mix until well combined. Should be almost paste-like.
Place chicken in large ziplock then pour marinade onto chicken and mix well, massaging the marinade into the chicken breasts.
Remove air from the ziplock then place in the fridge overnight.
When ready to cook, you can either grill chicken or cook in a pan over the stove top -- Place pan over med-hi heat and when heated, place chicken direcly onto pan, no oil. Let it sear for a couple minutes then flip. Sear for another minute then add chicken broth and cover to cook for about 15-18 minutes depending on size of chicken.
