Warm White Bean & Spinach Salad

2 slices Bacon, chopped1/2 cup Onions, chopped1 cup Mushrooms, chopped10 oz Spinach15 oz can Cannellini Beans, drained & rinsed1 cup Riced Cauliflower, water squeezed out
1. Heat a skillet on medium heat and add chopped bacon. Fry until golden brown, then remove bacon with a slotted spoon and let drain on a paper towel.
2. Add onions and mushrooms and saute until soft, about 5 minutes.
3. Add in beans and cauliflower. Stir until heated through.
4. Add spinach. Turn off heat and stir in bacon.
Serve as a main entree or side dish.
Serving Size: Makes 4 1 1/2- cup servings
