Lentil and Sausage Salad

Ingredients
1 lb ground sausage1 cup chopped sweet onion3 cups cooked lentils1 cup chopped green pepper1 cup chopped fresh tomatoes4 hard boiled eggs, peeled and diced3 Tbsp olive oil1 tsp mustard1/4 tsp ground pepper6 cups mixed romaine and spinach5 Tbsp red wine vinegar1/2 tsp minced garlic1/2 tsp salt
Directions
Cook sausage and onions. Allow them to cool in fridge while chopping rest of ingredients. Add pepper tomatoes, lentils, and greens. Mix vinegar, oil, mustard, garlic, salt and pepper and pour over the salad. Mix thoroughly and garnish with eggs. Serve fresh as the greens will become soggy.
