2 egg whitespinch cream of tartar0.75 cup Splenda1 tsp vanilla1.75 cup crispy rice cereal1 cup unsweetened coconut
makes 12 cookies
Preheat oven to 275 F. Put parchment paper on cookie sheet.
In large bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add Splenda and beat until stiff.
Fold in vanilla, cereal and coconut. Drop by tbsp onto pans.
Bake 18-20 minutes or until lightly browned and firm to touch.
