Vegan Cashew Cheese

Ingredients
2 cups raw cashews soaked in filtered water for 2 – 4 hours1/4 cup – 1/2 cup filtered water as needed for desired consistency1/4 cup freshly squeezed lemon juice1/2 cup nutritional yeast4 cloves fresh garlic minced1 tsp sea salt1 tsp granulated garlic (optional)1 Tbsp freshly chopped flat leaf parsley (optional)
Directions
Combine all ingredients in food processor or blender (a Vita-Mix is ideal for this if you like a really smooth spread). Refrigerate until firm.
