Chicken Cornbread Bake

1/2 cup finely chopped onion1/4 cup finely chopped red bell pepper1 jalapeno or other hot pepper, finely chopped8 oz cooked chicken, finely chopped or shredded1 can (14.5 ounces) diced tomatoes with green chiliesseasonings to taste2 egg whites1/2 cup milk1 pkg (6 oz) cornbread mix1 cup shredded mozzarella or any combination of low fat or fat free cheeses
Saute onion and peppers in cooking spray for 3-5 minutes. Add chicken, tomatoes with green chilies, and season to taste. Continue cooking for about 5 minutes. Combine egg whites, milk, and cornbread mix in a baking dish, mixing well. Spoon chicken and veggie mixture on top of the batter and then top with shredded cheese. Bake at 400 F for 15-20 minutes.
