tofu and brown rice stuffed red peppers

8 red peppers, cored but whole2 cups brown rice 1 package of tofu, in chunks1 leek, sliced1/2 vidalia onion, chopped3 cloves garlic1/2 cup chopped walnuts1 bag frozen peas3 tomatoes, chopped1/2 6 oz can of tomato pastedash of balsamic vinegar
boil brown rice in 4.5 cups water.
while making rice, saute onion, garlic, leek in a large saucepan or skillet until soft. add tofu. add everything else but red peppers. season with salt, pepper, rosemary, thyme, oregano etc as desired.
mix veggies with rice. stuff each pepper until full. roast in oven or on bbq until slightly soft.
