Introduction

Light and fluffy, great for breakfast or a snack! Light and fluffy, great for breakfast or a snack!
Number of Servings: 10

Ingredients

    3 bananas
    2 cups flour
    dash of salt
    1 tsp baking powder
    3/4 cup sugar
    2 tbsp oil

Directions

Preheat the oven to 350*F.
Mist a loaf pan with oil.
In a large bowl, mash the 3 bananas with a fork until mostly smooth.
Add oil, and mix throughly.
Add baking powder and dash of salt to the mixture, and stir.
Add flour and stir until combined.
Pour batter into the loaf pan.
Bake for 40 minutes, or until top is lightly golden and toothpick inserted in center comes out clean.
Enjoy this light fluffy banana bread right out of the oven, or after a few days.
I like to spread applesauce and sprinkle cinnamon on top.

    I added 1 cap vanilla extract, 1 tsp. cinnamon, 1/4 tsp. nutmeg, used brown sugar, used 1/4 cup applesauce instead of oil. Bread was great warm, and can't wait to try tomorrow morning toasted for breakfast. Thank you for posting this recipe! - 12/3/08

    I used whole wheat flour and subbed unsweetened applesauce for the oil in this recipe. it cut out about 40 calories and all the fat and made for a nice sweet bread. it's not as flavorful as traditional banana breads but the recommendation to serve with applesauce and cinnamon makes up for it. - 6/25/07

    I would use a sugar substitute and apple sauce instead of oil. Other wise this is a good banana bread. - 11/25/08

    Banana bread with three ripe bananas can easily take less sugar. 1/2 a cup is my recipe and I use Canola oil for all of my baking. My recipe calls for 1/4 cup oil. other than that its the same, grandkids make it and eat it for breakfast with frozen blueberries.Beat ripe nanas to liquid More flavor. - 5/10/10
