Introduction

I love ranch dressing, but it's so heavy! Here's a lighter version that also happens to be vegan. You can substitute regular low-fat mayonnaise and skim milk for the coconut milk and vegan mayo. I love ranch dressing, but it's so heavy! Here's a lighter version that also happens to be vegan. You can substitute regular low-fat mayonnaise and skim milk for the coconut milk and vegan mayo.
Number of Servings: 12

Ingredients

    1/2 cup coconut milk
    1/2 cup vegan mayonnaise
    3 T red wine vinegar
    1/4 cup fresh herbs (I used parsley, basil, thyme, a bit of mint, and dill. Use any combination, including cilantro, oregano, etc.)
    1 clove garlic
    1 teaspoon onion, chopped
    salt and pepper to taste

Directions

Mix all ingredients in a blender and pulse until well blended. Add salt and pepper to taste. The flavors will get more intense as the dressing sits. Add more coconut milk if the dressing is too thick or too intense. (You can also use dried onion or garlic powder in this recipe.)
Serving size: 1 1/2 tablespoons

    not to bad, I just watch the fat/processed more....truly avocado can replace the vegan mayonaise whipped up with a small zucchini or cucumber gives it a smooth healthier alternative to a processed not so healthy item like vegan mayo. - 4/17/13

    I make a similar recipe but I double the veganaise and leave out the milk altogether. This makes a thicker ranch dip which is perfect for dipping veggies in. Also, there's no need to use a blender. You can very easily just stir it a bit by hand and it's great! - 1/7/14
