Homemade Honey Granola

3 cups large flake oats1/2 cup honey1/2 cup olive oil1/4 tsp salt1/2 cup dried fruit or nuts (optional)Optional1 tsp vanilla1 tsp cinnamon
Preheat oven to 350 deg F.
Mix all ingredients except oil and honey in a bowl.
Heat oil and honey together in a sauce pan until fully melted.
Add heated oil and honey to mixture in bowl.
Place mixture on cookie sheet. Bake for 25 minutes or until slightly browned. Remove from oven and let cool in pan (loosen and scrap from bottom on pan. Once cool remove from pan and store in containers. Keeps for a week or so.
Serving Size: Makes 14 1/4-cup servings
