Greek Chickpea Salad

Ingredients
1 can of chickpeas1/2 raw zucchini, chopped1 whole tomato, chopped1.5 tbsp of olive oilJuice of 1 whole lemon1 tbsp of fresh mint, choppedSea salt and black pepper to taste
Directions
Combine chickpeas, zucchini and tomato in a medium sized bowl. Set aside. In a separate dish, combine olive oil, lemon juice, mint, salt and pepper. Pour over chickpea mixture and stir. Serve immediately or refrigerate and serve cold later.
