4 lbs beef chuck potroast1 tbsp extra virgin olive oil1.5 tbsp kosher salt.5 tbsp fresh ground pepper.5 cup sweet vermouth1.5 cup good red wine.25 cup light molasses1 tbsp apple cider vinegar16 small youkon gold potatoes 2.5 " dia.6 large carots peeled cut in chunks1 large sweet onion cut in wedges2 large stalks celery cut in chunks1 tbsp fresh rosemary whole leaves2 tbsp fresh thyme leaves
Salt and pepper chuck. Brown the meat whole in a large cast iron fry-pan. Place the meat in the bottom of a large crock pot. De-glaze the pan with the vermouth and pour into the crock pot scraping the pan. Pour the red wine, vinegar and molasses over meat. Place the vegetables on the meat. Top with the herbs Place lid on the crock pot and cook for 4 hours or until meat is tender and vegetables are done. If you can, baste the vegetables with the meat broth that forms in the pot. Makes 16 one cup servings.
