Ingredients

    32 ounce pork tenderloin (comes in a double pack)
    1/2 cup brown or Dijon mustard
    1 tsp dried thyme
    2 tsp garlic powder
    1 tsp black pepper
    1 1/2 cups panko breadcrumbs

Directions

Mix the mustard with the spices and spread on the pork tenderloins. Roll the mustard covered tenderloins in the panko crumbs and place on a greased or parchment lined baking sheet. Bake in a 400 degree oven for 15-25 minutes, or until a thermometer inserted in the largest section of the pork reads 165 degrees.

    Excellent & easy! Only problem was that it took a good 50 min. to cook. (Note to self---check at 140 degrees---do not overcook!) - 2/2/12

    Made this recipe for my daughter and I and we both loved it. The only issue I found with the recipe is the cooking time was too low, could be my oven. If you flatten the meat it might work in that time. Also, flavour decreased when reheated the next day, so be aware of that. Added a touch of salt - 1/13/16

    I haven't had this, but I have had pork ribs cooked with mustard and they were delicious. The bread crumbs should make them crunchy. - 2/7/21
