Carrot Soup

Ingredients
1 lb carrots, peeled 1 Tbsp olive oil3 Tbsp butter1 onion1 stalk celery1 med potato1 med sweet potato4 cups chicken or veggie stocksalt and pepper to taste
Directions
Saute onion in oil and butter til light in color.
Add celery and potatoes and fry for a few minutes.
Add chopped carrots and fry 3-4 minutes stirring frequently. Reduce heat and simmer 8-10 minutes til tender. Puree soup in blender or with immersion blender.
