Pepper, red onion & goat's cheese frittata

Ingredients
6 eggs 1 red onion , halved and sliced 1 red pepper , chopped into 2cm pieces 100g goat's cheese ½ tsp paprika a small handful soft herbs, such as parsley and chives, roughly chopped
Directions
1.Beat the eggs and season well. Heat 1 tbsp oil in a small non-stick frying pan and cook the red onion and red pepper for 3-4 minutes to soften. Add the eggs and cook for 5-6 minutes until almost set.
2. Dot the goat's cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for 2-3 minutes until golden. Cut into wedges and serve with salad.
