2 medium zucchini (about 3/4 pound) 2 tablespoons grated red onion 2 extra-large eggs, lightly beaten 6 to 8 tablespoons all-purpose flour (depending on moisture) 1 teaspoon baking powder 1 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 2 T vegetable oil
Grate zucchini and onion and put in bowl. Add eggs, flour, baking powder, salt and pepper until well blended. Put olive oil in pan and cook like regular pancakes.
