Coconut chicken

Ingredients
200g chicken1tsp finely chopped lemon grass1 tbsp olive oil2 cloves of garlic or 1tsp garlic puree1 medium onion, diced1 medium pepper, deseeded and cut into strips1 tbsp soy sauce200g mangetout200ml coconut milk2 tbsp curry paste
Directions
Heat oil over medium heat in large saucepan and add pepper and oil, cook for 3-5 minutes.
Add chicken and cook for 3-5 minutes.
Add lemon grass, mangetout, garlic, soy sauce and curry paste and stir-fry for 3-5 minutes.
Add coconut milk, cover and simmer for 10 minutes.
Serve immediately over rice.
