Spinach Artichoke Rice

Ingredients
1 tbsp olive oil1 medium onion2 tbsp minced garlic4 cups frozen spinach1 can cream of mushroom soup1 can sliced mushrooms1-1/4 cup marinated artichokes, chopped2 cups cooked riceGround black pepper
Directions
1. Heat oil in a large skillet over medium heat. Saute onions for 3-4 minutes. Add garlic and saute 1-2 minutes longer.

2. Squeeze excess water from spinach. Add to onions and garlic.

3. Add remaining ingredients and heat through, mixing well. Season with pepper to taste.


Makes about 8 1-cup servings.
