Chicken Tikka Masala

Ingredients
1 Tbsp Olive Oil 1 cup Onions, chopped 1.5 tsp Cumin, ground1.5 tsp Cardamom, ground2 tsp Coriander, ground 1 tsp Tumeric, ground1/4 tsp Cloves, ground 1/4 tsp Cinnamon, ground0.5 tsp Sea Salt 2 tsp Crushed Red Pepper Flakes1 tsp Ginger Root, minced3 Garlic Cloves, minced 2 - 14.5 oz cans Diced Tomatoes 4 Chicken Breasts, skinless/boneless, chopped
Directions
In a large pan, saute chopped Onions in Olive Oil until soft. Add in all the seasonings plus Ginger and Garlic - stir to coat onions and allow Ginger and Garlic to warm through. Stir in both cans of Diced Tomatoes and bring to a boil. Toss in Diced Chicken Breast, stir to coat. Bring again to a boil, reduce heat to low, and simmer for about 15-18 minutes or until Chicken is cooked through. Serve with Basmati Rice and Naan Bread.
