Spanish Rice

Ingredients
1 tbsp olive oil1 medium onion, chopped1 clove garlic1 stalk celery, chopped1 carrot, peeled and chopped1 tsp. cumin1/2 tsp. coriander1 tsp. chili powder1/2 tsp. oregano1 tsp. paprika2/3 cup Fast Cooking Brown Rice (such as Uncle Ben's Fast and Natural, NOT minute rice)1 oz. Whole Grain Linguine, broken into very small pieces1/4 cup frozen corn1/4 cup frozen peas1/2 cup canned diced tomatoes with green chilis1 3/4 cups low sodium chicken stock1 tbsp. butter or margarine (optional, nutrition info does not include this)
Directions
1. Heat oil in skillet, add onion and cook until translucent.

2. Add garlic, celery and carrot, cook for about 5 minutes.

3. Add spices, rice and pasta and cook until fragrant.

4. Add corn, peas, tomatoes and stock (and butter/margarine if using), bring to a boil and simmer covered about 10 minutes or until rice and pasta is cooked.
