I also used a tspn.of dill and garlic.
1 review seemed concerned about using corn starch since the potao has enough starch. The corn starch is for thickening and is a different kind of starch,by the time it's diluted in the 6 cps. of liquid it's miniscule.splurge and get fresh spinach, much better.

This is a great recipe to use with other vegetables besides spinach. It would make a nice cream carrot soup as well. - 8/3/08

Good, but is very time intensive. I added 1T of Tasbasco, parsley, and used 2c. low sodium chicken broth and 2c. low sodium vegetable broth instead of the water. Also, 2c. nonfat milk rather than 2%.
    Doesn't seem worth the effort.
