Greek Roasted Potatoes

Ingredients
6 medium potatoes8 cups water4 tsp chicken oxo mix (chicken bullion mix)1 lemon, juice of2 garlic cloves, minced2 tsp olive oil2 tsp fresh oregano (or 1 tsp dried)1/2 tsp salt or greek seasoning saltpepper to taste
Directions
1. peel and cut potatoes into quarters.
2. in a large pot, bring potatoes to a boil with water and chicken oxo. Cook until slightly tender but still firm (about 5-10 minutes)
3. drain potatoes and mix together with remaining ingredients in a large bowl, and then pour into greased cooking sheet or pan.
4. Roast at 450* until cooked through and slightly crispy (about 40-60 minutes), stirring occasionally.
