Corn Chowder

Ingredients
1 onion chopped3 slices of bacon chopped or 1/2 cup mince ham2 large potatoes diced6 cups chicken stock1 can of cream style corn2 cups frozen cornsalt and pepper to tastenutmeg to taste
Directions
Heat bacon strips or ham in a heavy pot on medium heat with a little water, sizzle until starting to brown. Add onion. Cook until translucent.

Add stock and potatoes. Bring to boil and simmer until potatoes are tender. Add cream style corn and mash gently so potatoes thicken the chowder. Add frozen corn, continue to heat until the corn is hot and tender. Taste and adjust seasonings.

You can add cream for a richer soup, or just a bit of milk. Other veggies can also be added, celery and red pepper is nice for a change of pace.

I often buy whole small hams and cut off the rind then use the slices of the middles for sandwiches. I love to thinly slice the rind into small strips to use in this chowder. Yummy!
